Date And Peanut Butter bites (With Flaky Salt)

Date and peanut butter bites with flaky salt are some of the world’s best snacks. They can be prepared in just a few minutes and offer a nutritious, indulgent, and satisfying treat.
Stuffed dates with peanut butter and flaky salt are my go-to snack for when I need an energy boost. They are an ideal pick-me-up during the time gap between lunch and dinner or before hitting the gym.
Snacking gets a bad rep, but research on snacking shows that healthy snacks can be beneficial to our health. Snacking throughout the day often means consuming fewer heavier meals (e.g. lunch and dinner). We are pro-snacking because it helps us maintain steady blood sugar and energy levels throughout the day, and these peanut butter dates are one of my all-time favorite snacks.
Their rich flavor and soft, chewy texture make Medjool dates luxurious and indulgent. They taste sweet, often caramel-like, with hints of honey and brown sugar. As for texture, Medjool dates are large and juicy, with a soft and sticky flesh that melts in your mouth. The natural sugars in Medjool dates give them a satisfying consistency, making peanut butter-stuffed dates a perfect snack.

Ingredients
- Medjool dates – Medjool dates are the largest dates and have more flesh than other dates. Their large size makes them perfect for stuffing. For the best texture and flavor, opt for non-pitted dates, as they tend to be fresher and juicier than pre-pitted ones. Simply remove the pits before stuffing.
- Peanut butter – 100 % peanut butter without added sugar or oils is the most tasty and healthiest option. Both smooth or chunky peanut butter works, depending on personal preference. The crunchy peanut butter will make this snack a little similar to snickers.
- Flaky salt – Use flaky salt or “fleur de sel” for concentrated hits of salt. We love the Maldon salt brand.
How to make date and peanut butter
This recipe couldn’t be simpler to make.
Create a split in the date by cutting it on one side, avoiding cutting it into two halves. Hold the cut portion of the date at the top and bottom, and pinch it to open the split and expose the seed. Remove the seed from the date.

Stuff the date with a teaspoon of peanut butter.
Sprinkle with a bit of flaky salt and repeat with as many dates as you please.

Enjoy immediately or refrigerate for the peanut butter will solidify.
Recipe adaptations
While this recipe has a simple ingredient list, there are plenty of ways to customize it to suit different tastes and dietary preferences. Here are some ideas:
- Swap the Nut or Seed Butter: You can replace peanut butter with hazelnut, almond, or pistachio butter for a different flavor profile. For a nut-free option, try sunflower seed butter or tahini. Keep in mind that tahini has a distinct savory edge, so consider reducing the added salt for balance. Feel free to experiment and discover your favorite combination!
- Add Spices: Enhance the flavor by mixing warm spices like cinnamon or pumpkin spice into the nut or seed butter. These spices pair beautifully with the natural caramel sweetness of the dates.
- Double-Stuffed Goodness: Medjool dates are large enough to hold multiple fillings. Try adding goji berries, pecans, or even crushed pretzels inside the dates before topping them with your chosen nut butter for an extra burst of flavor and texture.
- Chocolate Coating: For a more indulgent twist, dip the stuffed dates in melted dark chocolate. Once set, they become an elegant and satisfying treat perfect for gifting or entertaining.
