Ingredients + Substitutions
- Firm tofu (200 -240 grams), drained and pressed
- 1 tbs white rice vinegar – for tanginess
- 1 tsp salt – adjust to taste
- 2 tbs nutritional yeast – adds umami and cheesy flavor
- 1/2 tsp garlic powder
- 1/4 tsp dry thyme
- 1/4 tsp dry oregano

Substitutions
- Tofu: Use firm or extra-firm tofu for best texture. Avoid silken tofu, as it’s too soft for this recipe.
- Nutritional yeast: Swap with 1 tbsp white or yellow miso paste. If your miso is thick, stir in 1 tsp water to thin it before mixing.
- Herbs: Feel free to switch it up. Fresh or dried basil, rosemary, dill, or parsley also work well.
- Vinegar: White rice vinegar gives a mild tang, but you can use apple cider vinegar or lemon juice instead.
Step-by-Step Instructions
1. Prep the tofu
- Open the package of firm tofu and gently pat it dry with a clean kitchen towel or paper towels.
- For even-sized cubes, you can trim the edges of the tofu before cutting it.
Expert tip: Make sure to dry the tofu cubes thoroughly. The drier the tofu, the better it will soak up all the marinade goodness!

2. Marinate the tofu
- Place the cubed tofu into a clean jar or airtight container.
- Pour in the white rice vinegar and give it a gentle mix to coat the tofu.
- Add the salt, nutritional yeast, dried oregano, and thyme.
- Seal the jar and shake well until the marinade is evenly distributed.
- You can enjoy it right away, but it gets even better after a few hours in the fridge.
- Store refrigerated for up to 5 days—perfect for meal prep!
How To Use Tofu Feta
This tofu feta is incredibly versatile – use it to elevate bowls, toss into salads, serve with roasted veggies, or enjoy as a quick protein-packed snack on its own.
Try tofu feta in:
- Salads like our Beet and Cucumber Salad
- Bowls like the Easy Vegan Poke Bowl
You can also mash or blend it into a cream spread and use it in wraps or sandwiches; it pairs beautifully with our Pistachio pesto.
Bonus Nutrition Tip
Tofu is a good source of iron, and your body absorbs it better when paired with vitamin C.
For optimal absorption, enjoy your tofu feta with vitamin C-rich veggies like bell peppers, tomatoes, broccoli, or leafy greens Reference).
Storage Tips
- Fridge: Store your tofu feta in an airtight container or jar for up to 5–7 days. The flavor gets even better after the first day.
- Don’t freeze: Freezing will change the texture and make it crumbly or spongey—not ideal for this recipe.
Expert tip: If your tofu feta has absorbed all the marinade, after sitting in the fridge for a while, give it a boost by adding another tablespoon of nutritional yeast and a teaspoon of rice vinegar.
