What you’ll need to make the silken tofu chocolate mousse

  • Silken tofu – Is very soft, creamy, and silken in consistency, which makes it a perfect replacement for cream in cooking. This recipe won’t work with any other type of tofu, so make sure you get silken tofu.
  • Chocolate – Anywhere between 65 – 80 % cacao bits will work, choose whatever tickles your fancy.
  • Toppings – There are many toppings options, including fruit, nuts, cookie crumble, an chocolate shavings. We love the raspberries and chocolate combination.
  • Salt – Whatever topping you opt for, add salt flakes to balance the sweetness and deepen the chocolate flavor.
  • Optionally Extra Virgin Olive Oil: For a truly decadent and luxurious you could add a drizzle of olive oil to whatever other toppings you are using.

Choose organic tofu

Tofu is one of the most common GMO foods. Soy is typically genetically modified to endure more pesticides, so buying organic or non-GMO tofu is crucial for health safety.

How to make the silken tofu chocolate mousse

Cut or break the chocolate into chunks.

Melt the chocolate. For the double boiler method, half-fill a small pan with water and bring to a boil. Place a heatproof bowl on top, making sure that the bottom is not touching the water. Add the chocolate, wait for the chocolate to start melting, then stir, and repeat until all the chocolate has melted. If using the microwave, place the chocolate chunks in a glass bowl and at 400 W for 30 seconds. Mix the chocolate and place back for another 30 seconds. Repeat until all the chocolate has melted.

Add the silken tofu – at room temperature, chocolate, maple syrup, salt, and cayenne pepper in a blender or a food processor and pulse until equally combined.

The mousse is now ready, but it will have a little liquid, pudding-like texture. It develops a more mousse-like texture when left to set in the fridge (for about an hour), if you have the time, set it in the fridge.

Chop and cut your toppings, such as fruit and nuts, and crumble graham cookies if using them. Shaved chocolate and coconut flakes can also be lovely toppings on this mouse.

Spoon the mouse into cute cocktail glasses or espresso cups, and add the toppings of your choice, and enjoy.

Store in the fridge covered with cling foil to avoid crust formation, for up to five days.

Tips and tricks for sucess

There are two crucial things to keep in mind when making this silken tofu mousse.

  • To avoid spoiling the flavor, it’s crucial not to overheat the chocolate during the melting process. Whether you opt for the double boiler or microwave method, exercising patience is key. The glass bowl absorbs more heat compared to the chocolate, so we suggest removing the chocolate from the heat source and mixing it. By doing so, you utilize the gentler heat retained by the bowl rather than the intense heat from the microwave or double boiler.
  • To ensure successful melting and mixing with the chocolate, the silken tofu must be at room temperature. To achieve this, either allow the tofu to sit at room temperature for at least an hour before making the dessert or place it, in its original packaging, in warm water for a few minutes. Cold tofu can cause the chocolate to solidify and prevent proper blending.
  • When made, it will be a little liquid, and have a pudding-like texture. It develops a more mousse-like texture when left to set in the fridge (for at least an hour).

    1. Hi Bjonr, Glad to hear you enjoyed it. Thanks for your feedback. You might have thought of that already, but in case not, using chocolate with a lower cacao percentage can also lead to a less rich mousse. I have to admit that we are quite the chocoholics, so to us, this is the perfect amount. To each their own!

I am obsessed with this recipe. It turns out perfect every time. I like to top it with dairy free whipped topping. Next I’m going to put it in a graham cracker crust. It’s pretty thick so I think it will be amazing!

    1. We are so happy to hear that you love this recipe and are getting creative with it. Putting a graham crust around it is a great idea – the longer you leave it in the fridge, the thicker and more mousse-like it will get, so it might make sense to let it rest in the fridge overnight for this recipe.

The best mousse I’ve ever ate. 🤩Super quick easy recipe for really enjoying dessert. I’ll definitely make it often. Darja, thanks for the recipe. 😊❤️

  3. This is a great recipe and a wonderful use of leftover silken tofu! Can it be frozen, or would that compromise texture too much?

    1. So glad you enjoyed the recipe! This is a great question! Freezing would, unfortunately change the texture quite a bit, so we wouldn’t recommend it. But the good news is that it keeps really well in the fridge for up to 5 days!

So simple, really easy to make, and tastes amazing! My husband cannot stop eating it lol. I have made it twice now and the second time around I doubled it because it goes so quick. Quick question, do the nutritional facts refer to the entire batch or per serving?
