What is matcha
Matcha is a Japanese powder tea made from ground green tea leaves. While matcha and green tea are made from the same plant, they are grown differently. Matcha is grown in a way that increases the amount of chlorophyll in the leaves giving the tea that characteristic bright green colour, that shines through in drinks and baked goods.
Consuming the whole leaf, in a powdered form, when drinking matcha, means consuming more flavor and nutrients compared to regular green tea. Matcha is a powerful antioxidant.
Where to buy matcha
There are two types of matcha: ceremonial (or premium) and food-grade. Ceremonial matcha has a lighter, more refined flavor and comes at a higher price, while food-grade matcha has a bolder flavor with a slightly bitter aftertaste and is much more affordable. We usually buy premium ceremonial matcha from a local tea shop because we love its smooth flavor. For this recipe, since it only uses a small amount of matcha, we happily use our ceremonial matcha here too.
How to store matcha
To keep your matcha fresh and prevent oxidation, store it in an airtight container in the fridge. This helps preserve its vibrant green color, delicate flavor, and nutritional benefits. Always make sure the container is tightly sealed to keep out moisture and odors from other foods.

- Matcha – We normally buy premium ceremonial matcha because it has the most enjoyable taste.
- Quick oats – Thin rolled oats are our favorite for this recipe, because they are small, which results in a creamier texture. Regular rolled oats will result in more textured oats. For smoother overnight oats, pulse them a little bit in a blender.
- Chia seeds – This superfood contains lots of nutrients, including protein, fiber, and healthy fats. Chia seeds are also a natural absorbent that develops a jelly-like texture when soaked. They will thus add a pleasant texture to the overnight oats.
- Hemp seeds – Add protein and a bit of an extra textural element to the oats.
- Soy milk – Helps to achieve a creamy texture by soaking the oats and chia seeds. It also packs a bit of protein.
- Maple syrup – Adds a subtle sweetness to the oats and neutralizes the subtle bitterness of matcha.
- Strawberries – Fresh and local strawberries will make these strawberry matcha overnight oats taste the best. You can tell how tasty the strawberries are by smelling them – they should have a pleasantly sweet smell.

Step by step instructions to make matcha overnight oats
Combine all ingredients, except the strawberries in a medium bowl. Mix well to evenly distribute the ingredients and ensure that all oats and chia seeds have been submerged in the liquid.
Leave aside for 10 minutes, until the oats, chia, and hemp seeds have absorbed the liquid. This will result in a creamier texture of overnight oats.


In the meanwhile, slice the strawberry in small cubes.
Spoon half of the oats mixture into a mason jar. Place half the strawberries on top of the oats, then spoon another layer of the leftover oats mixture. Place the remaining strawberries on top.
Stacking the oats and strawberries in layers, ensures that you get a perfect bite with every spoonful.

How to store strawberry matcha overnight oats
Store the oats in the fridge, in a closed mason jar for up to three days. After three days, strawberries won’t be as fresh anymore – if this is a problem, we suggest using different fruit, like blueberries. or raspberries. The oats without the strawberries can be refrigerated for up to five days.
