Indulge in this date bark’s luxurious combination of caramel-flavored dates, slightly savory pistachios, and buttery white chocolate. Easy to make and loaded with fiber and healthy fats, this date bark is bound to fulfill your snacking cravings while keeping you satisfied for a long time.

The caramel flavor from the dates, sweet and slightly savory pistachios, and the buttery white chocolate make this date bark the most luxurious snack.

I love date-based snacks for their naturally sweet, chewy texture and lasting fullness. Whether it’s this luxurious date bark or my favorite Date and Peanut Butter Bites (with Flaky Salt), I gravitate towards snacks that are simple to prepare and stay fresh in the fridge for about two weeks.

Both dates and pistachios are nutrient-dense, providing a quick energy boost without needing a large portion. It’s the kind of snack you can grab in a hurry—whether you’re refilling your water glass or heading out the door.

Why you’ll love this white chocolate bark

  • Buttery texture from white chocolate – The combination of creamy white chocolate and smooth pistachio butter creates the most indulgent melt-in-your-mouth bite. It balances beautifully with the chewy, caramel-like dates.
  • Lasts for two weeks in the fridge – Make a batch, store it in an airtight container, and you’ll have a quick, satisfying snack ready whenever cravings hit. Perfect for busy days when you need an instant energy boost.
  • Easy to make – No complicated steps, no special equipment—just a simple process that comes together in minutes. The hardest part is waiting for the chocolate to set!
  • Only three ingredients – Medjool dates, white chocolate, and pistachio butter. That’s it. Simple ingredients, big flavor. If you’re a pistachio lover, you might also want to check out our Pistachio Pesto for another way to enjoy this rich, nutty flavor.
  • Nutritious plant-based ingredients – Getting enough calories on a plant-based diet can sometimes be tricky, which is why easy, nutrient-dense snacks like this date bark are the ultimate example of easy vegan snacks. It’s packed with fiber, healthy fats, and natural sweetness, making it a great go-to for keeping energy levels up without much effort (date nutrition, pistachio nutrition).
  • Support stable energy levels throughout the day –

Ingredients to make date bark

  • Medjool dates –  Medjool dates are the largest dates and have more flesh than other dates. For the best texture and flavor, opt for non-pitted dates, as they tend to be fresher and juicier than pre-pitted ones. Simply remove the pits before using them in this recipe.
  • Pistachio butter – 100 % pistachio butter without added sugar or oils is the most tasty and healthiest option.
  • White chocolate – Any plain white chocolate will work. We’re using vegan white chocolate.

Step-by-step instructions for making the White Chocolate and pistachio date bark recipe

Prepare the dates

Start by making a small cut along one side of each date, being careful not to cut all the way through. Hold the date at the top and bottom, gently pinch it open, and remove the seed.

Flatten the pitted dates and arrange them on a sheet of parchment paper on top of a cutting board or another flat surface that will be easy to transport to your fridge. Arrange the dates so they form a rectangle with three dates vertically and four horizontally. The dates should be touching, and there should be as little free space in between as possible.

Place another sheet of parchment paper on top and use a rolling pin to gently flatten the dates into an even layer.

Spread Pistachio butter

Spoon two tablespoons of pistachio butter onto the flattened dates and spread it evenly across the surface. Transfer the chopping board to the fridge while you melt the chocolate—this helps keep the layers separate.

Melt & spread the white chocolate

Bring a small pot of water to a gentle boil. Break the white chocolate into pieces and place them in a heatproof bowl or a small pot that can sit over the steaming water without touching it—this is called the double boiler method.

Turn off the heat and stir the chocolate continuously until fully melted. White chocolate melts quickly, so keep an eye on it to prevent burning. As soon as it’s smooth and lump-free, remove it from the heat.

Pour the melted white chocolate over the pistachio butter layer and gently spread it into an even, thin coating. Avoid over-spreading to keep the pistachio butter and chocolate layers separate.

Cool down the date bark

Place the date bark in the freezer for 10 minutes or in the fridge for 20 minutes to allow the chocolate and pistachio butter to set.

Once firm, use a large knife to slice the bark into 12 evenly sized squares.

Enjoy this delicious date snack immediately, and store any leftovers in an airtight container in the fridge for up to two weeks.

    These are UH-MAZING😍
We couldn’t get the giant dates in our store so we made bite sized “pralines” and they were bomb!!! Oh, and we also ate them straight up with the warm chocolate😂
